Ingredients
- Pasta-
- 1 tablespoon Salt
- 3 tablespoons oil
- 1 pound of small pasta (fusilli, penne, radiator, macaroni, etc)
- Salad mix ins-
- 1/2 cup sun dried tomatoes, chopped
- 1 cup fresh basil, chopped
- 1 cup fresh grated Parmesan
- 1/2 cup pine nuts, lightly toasted
- 1 pint of cherry tomatoes, halved
- 1 pound of fresh mozzarella cheese, cut into bite sized pizza
- 2 cups arugula
- About 2-3 tablespoons balsamic glaze for topping
- Dressing-
- 1/4 cup pesto
- 2 tablespoons fresh lemon juice
- 2 tablespoons oil from sun dried tomatoes jar
- 1/3 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
