- 18 tomatoes Ripe
- 2 28-oz cans Plum tomatoes
- OR EQUIVALENT AMOUNT
- 2 medium Onions sweet diced
- 2 tablespoons Salt
- 2 tablespoons Ginger
- 1 teaspoon Chili powder mild
- 2 tablespoons Cinnamon
- 2 tablespoons Allspice
- 1 dash Chili seeds
- 1 dash Tobassco
- 4 Red pepper sweet
- 1 1/2 cups brown sugar adjust (up to 2 cups), (or to taste)
- 1 cup vinegar plain
- Wine or cidar is fine
