• 1 vanilla bean, halved and scraped of seeds
• 1/2 pound light brown sugar
• 2 ounces granulated sugar
• 1 large egg plus 1 egg yolk
• 12 ounces bread flour
• 1 teaspoon baking soda
• 3/4 teaspoon fine salt
• 1 ounce milk
• 6 ounces milk chocolate candy bar, chopped into 1/2-inch chunks
• 6 ounces dark chocolate candy bar, chopped into 1/2-inch chunks
• Vanilla fleur de sel, optional
• For the Vanilla Milk:
• 1 quart whole milk
• 3/4 cup sugar
• 1 1/2 vanilla beans, split and scraped
