- 1 lb beets, stem and root cut off, peeled
- 2 cups Cocoa Puffs™ cereal
- 1/2 teaspoon unsweetened cocoa powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 1/2 cup cornstarch
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon salt
- Minced parsley, olive oil, lemon juice, lemon zest, if desired
