- 235g (1 cup) sugar
- 1+1/2tsp baking powder
- 1 tsp salt
- 1/2 tsp bicarb
- 175mm (3/4 cup) orange juice
- zest of 1 orange
- 2 tbs sunflower oil
- 1 egg - beaten
- 250-300g (1 1/2 cup) cranberries
- 100g (1/2 cup) walnuts + a few more for the top
