Creamy Spinach Lasagna Rollups - Rachel Tritsch

Ingredients

• 2-3 tbs olive oil
• 1/2 onion, diced
• 3 tbs garlic, minced
• 1 tsp red pepper flakes
• 6 oz spinach
• 1 cup ricotta
• 1 cup small curd cottage cheese
• 1 egg
• salt and pepper to taste
• 1 tbs parsley
• 2 tbs spinach and herb seasoning
• 1/2 cup shredded parmesan cheese
• 7 lasagna noodles, cooked
• approx 4 cups marinara
• zest of one lemon
• 2 cups shredded mozzarella cheese
