Ingredients

• 25 jumbo pasta shells
• 2 tablespoons olive oil
• 1 sweet onion, diced
• 4 cloves garlic, minced
• kosher salt, to taste
• black pepper, to taste
• 1 zucchini, chopped
• 2 ears corn, shucked and kernels cut off the cob
• 1 (15-ounce) container ricotta cheese
• 1 large egg, lightly beaten
• 2 cups mozzarella cheese, freshly grated, divided
• 1/2 cup parmesan cheese, finely grated
• 2/3 cup prepared pesto, divided
• 2 cups marinara sauce
