Chicken Tortilla Soup

Ingredients

• 1 tbsp evoo
• 1 lb chicken breast
• salt and pepper to taste
• 3 garlic cloves
• 1 yellow onion
• 1 green bell pepper
• 2 tbsp tomato paste
• 1 tbsp chili powder
• 1 1/2 tsp ground cumin
• 1 tsp, dried oregano
• 4 cups chicken or vegetable stock
• 1 (15 oz) can diced tomatoes
• 1 (15) oz can black beans
• 1 can corn kernels
• 1 lime
• Shredded cheddar cheese (if not DF)
• Diced red onion
• Jalapeno slices
• Chopped cilantro leaves
• Tortilla Strips or broken up chips
