• 2 tablespoons vegetable oil
• 1 medium-sized onion, chopped
• 1 large carrot, sliced
• 1 teaspoon caraway seeds
• 1/2 teaspoon paprika
• 1 cup apple juice
• 4-1/2 cups (1-1/2 pounds) sauerkraut, drained
• 1 large apple, quartered, cored and sliced
• 1 cup sour cream
• 1/2 cup shredded Swiss cheese
