Ingredients

• 8 ounces extra-sharp cheddar cheese, grated by hand (not pre-grated)
• 2 tablespoons freshly grated onion
• ¼ cup softened cream cheese
• ½ cup pimento or other roasted red peppers, finely diced
• 3 tablespoons mayonnaise
• 2 tablespoons Hoff’s Wake Up Call Hot Sauce
• Salt and freshly ground black pepper to taste
