Ingredients

• 1 lb dried black beans
• 2 tbsps olive oil
• 1 yellow onion, diced
• 1 large green bell pepper, seeded, and diced
• 4 garlic cloves, minced
• 1 tsp ground cumin
• 1 tsp cumin seeds, toasted
• 1 tsp dried oregano
• 2 bay leaves
• 8 cups water or chicken stock
• 1 lb smoked ham hocks (about two pieces)
• ¼ cup cilantro, finely chopped
• 1 tbsp lime juice
• Salt and freshly ground black pepper, to taste
