Zucchini Dessert Bread Recipe

Ingredients

• 1 cup unbleached white flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1/8 teaspoon ground cloves
• 1/4 teaspoon powdered ginger
• 1/4 teaspoon salt
• 1/3 cup canola or sunflower oil
• 2 tablespoons fresh orange juice
• 1/2 cup maple syrup (use 3/4 cup for a sweet tooth)
• 1 egg
• 1 cup zucchini (with or without peel), grated
• 1/3 cup raisins or unsweetened, shredded coconut
• 3 tablespoons walnuts, chopped
