- 2 tbsps olive oil
- 30g unsalted butter
- 1 1/2 large white onions, finely chopped
- 700ml tomato sauce (or blended tinned peeled Italian tomatoes)
- 3 tbsps finely chopped Italian parsley leaves
- 950ml double cream reduced by half (475ml)
- 175ml vodka
- Salt and pepper
- 900g penne liscie # 40 (recommended: de cecco)
