Ingredients

• 1 C. bread cubes
• 1 clove garlic, minced
• 1 t. olive oil
• 2 slices Kunzler bacon, diced
• 1 C. grape tomatoes, halved
• 1/2 t. sugar
• 1/2 C. leeks, thinly sliced
• 1/4 C. dry white wine
• 1/2 C. chicken broth
• 1 t. red wine vinegar
• 1/4 t. red pepper flakes
• 1 C fresh spinach leaves
• 1/4 t. fresh thyme, minced
• 4 oz. Rotini pasta
• Salt to taste
