Tomato Cucumber Salad - The Loveless Cafe

Ingredients

• 1 red onion, cut in 1/4 inch wedges
• 4 cucumbers, peeled and sliced in 1/2 inch rounds
• 3 roma tomatoes, cored and cut into 1/2 inch wedges
• 1/2 tsp kosher salt
• 1/2 tsp black pepper
• 3/4 cup cider vinegar
• 6 tbs sugar
• 2 tbs canola oil
• 1 tbs chopped parsley
