Ingredients

• 1 chicken cut into four pieces
• 4 tablespoons olive oil
• 2 tablespoons flour
• 2 bay leaves
• 4 shallots, peeled and sliced
• 1 cup white wine
• 3 tablespoons Dijon mustard
• 3 tablespoons mustard seeds
• 2 cups chicken stock
• 1 teaspoon salt plus salt to rub on chicken
• 1 bunch radishes, cut in half with leaves left on
• Salt to taste
