Ingredients

• 1 teaspoon garlic powder
• 1 teaspoon smoked paprika
• 1 teaspoon dried oregano
• 1 teaspoon cumin
• 2 tablespoons extra-virgin olive oil
• 1 teaspoon sea salt
• 1/4 teaspoon black pepper
• 1 pound chicken breasts, boneless and skinless, cut into bite-size pieces
• 1 medium onion, chopped into medium pieces
• 1 zucchini, sliced vertically into four large pieces, then chopped into smaller pieces
• quinoa, optional, to taste, cooked and warm, for serving
