Ingredients

• 3 market quarts (3 L) strawberries, hulled and halved
• 3⁄4 cup (175 mL) red wine
• 1⁄3 cup (75 mL) granulated sugar
• 2 tbsp (30 mL) water
• 1 tsp (5 mL) vanilla extract
• Pinch salt
• 1⁄2 tsp (2 mL) lemon juice
• 1⁄2 cup (125 mL) chopped white chocolate
• 2 cups (500 mL) heavy cream (35% mf)
• 2 tbsp (30 mL) creme de cacao

• 1 tbsp (15 mL) baking powder
• 1 tbsp (15 mL) granulated sugar
• 1⁄2 tsp (2 mL) salt
• 1⁄2 cup (125 mL) butter, diced
• 1 egg
• 3⁄4 cup (175 mL) heavy cream (35% mf)
• 1 tbsp (15 mL) icing sugar
