Ingredients

• 1/2 cup salt
• 1/2 cup sugar
• 4 quarts water
• For the Paste
• 2 tablespoons juice from 1 orange
• 2 tablespoons fresh cilantro leaves
• 1 tablespoon juice from 1 lime
• 1 tablespoon olive oil
• 1 teaspoon ground cumin
• 1 teaspoon chili powder
• 1 teaspoon sweet paprika
• 1 teaspoon ground coriander
• 1 garlic clove, peeled
• 3 1/2 lb whole chicken
• 1-2 chunks of cherry wood
