Ingredients

  • 2-3 pounds snapping turtle meat, bone-in
  • 2 quarts beef broth
  • 2 quarts chicken broth
  • 2 quarts water
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 2 cans (16 ounces each) fire roasted tomatoes
  • 2 cans (16 ounces each) tomato puree
  • ¾ cup sherry wine
  • 3 tablespoons hot sauce (I use Crystal)
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon lemon juice
  • 2 teaspoons cajun seasoning
  • 1 bay leaf
  • ½ teaspoon pickling spice blend
  • 6-8 hard boiled eggs, chopped
