Maryland Style Turtle Soup - Realtree Camo
A Maryland tradition since the late 1800s, this style of soup is still made and served today and is the perfect way to cook a snapping turtle
Ingredients
- 2-3 pounds snapping turtle meat, bone-in
- 2 quarts beef broth
- 2 quarts chicken broth
- 2 quarts water
- 1 onion, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 2 cans (16 ounces each) fire roasted tomatoes
- 2 cans (16 ounces each) tomato puree
- ¾ cup sherry wine
- 3 tablespoons hot sauce (I use Crystal)
- 3 tablespoons Worcestershire sauce
- 1 tablespoon tomato paste
- 1 tablespoon lemon juice
- 2 teaspoons cajun seasoning
- 1 bay leaf
- ½ teaspoon pickling spice blend
- 6-8 hard boiled eggs, chopped
