• 1 lb peeled sweet potatoes cut into 1/4" match-sticks (1 lb AFTER they're all cut up!)
• 2 T olive oil
• 1/2 tsp ground cumin
• 1/2 tsp oregano
• 1/2 tsp cilantro
• 1 tsp garlic salt
• 1 T. fresh chopped parsley or 1 tsp dried
• 1/8 tsp black pepper
