• 3/4 cup chopped onion
• 1-2 eggs, lightly beaten
• 1/4C 1 tbsp light, low-sodium soy sauce, divided
• 1/2 cup frozen peas, thawed
• 1/2 cup shredded baby carrots
• 4 green onions, chopped
• 2 cups bean sprouts, optional
• Salt, to taste
• 1 bag cauliflower crumbles
