Ingredients: 3 tbsp of olive oil; 55g of butter; 3 of onions or 6 shallots, sliced; 4 of garlic cloves, crushed and finely chopped; 1kg of ripe vine or sweet tomatoes or very good quality tinned tomatoes, chopped; 45g of good quality tomato purée; 2 of red chillies, seeded and finely chopped (optional); 1 litre of Vegetable stock vegetable stock or chicken stock; 1 heaped tbsp of Folláin Tomato Relish or Chargrilled Pepper Relish; Pinch of Sea salt and cracked black pepper; 2 tbsp of pesto (check out our home made pesto recipe)
