• ½ c hot water
• ¼ c unsalted butter, plus more for greasing the pans
• 1 tsp baking soda
• 2 c white sugar
• 1 c vegetable shortening
• 4 egg yolks
• 2 c flour
• 1 c buttermilk
• 4 egg whites (beaten stiff but not dry)
• 1 tsp vanilla
• 1½ c white sugar
• ¾ c unsalted butter
• 1½ tsp vanilla extract
• 1 (12-ounce) can evaporated milk
• 7 oz sweetened coconut flakes
• 1½ c chopped pecans
