Ingredients

• 1 1/2 cups whole wheat pastry flour
• 1 1/2 cups unbleached flour
• 1 1/2 teaspoons salt, divided
• 2 sticks unsalted butter, chilled, plus 2 additional tablespoons
• 1 cup ice water
• 3 large onions, thinly sliced
• 2 tablespoons fresh thyme, chopped
• 1 tablespoon Dijon mustard
• 1/2 teaspoon pepper
• 8 ounces sharp cheddar cheese, shredded
• 4 large baking apples, peeled and sliced (about 6 cups)
