Quesabirria Tacos Recipe

Ingredients

• 2 pound beef chuck
• 3 stemmed and seeded dried guajillo chilies
• 2 stemmed and seeded dried ancho chilies
• 2 cups shredded Oaxaca cheese or Monterey Jack cheese
• For garnish, fresh cilantro, red onions, lime wedges
• 4 cups of beef broth
• 1 medium chopped onion
• 4 cloves of minced garlic
• 2 bay leaf
• 1 teaspoon of cumin
• 1 teaspoon of oregano
• 1/2 teaspoon of salt
• 1/4 teaspoon of black pepper
• 12 corn tortilla
