Sloppy Joe Cornbread Casserole | Oregonian Recipes
This casserole is a fun and delicious combination of sloppy joe filling and a cornbread top. It reheats really well the next day.
Ingredients
- 2 cups textured vegetable protein granules, preferably organic
- About 1-1/2 cups boiling water
- 1 tablespoon olive oil, plus more as needed
- 1 large yellow onion, chopped
- 6 cloves garlic, minced or pressed
- 10 ounces cremini or brown button mushrooms, sliced
- 2 (15-ounce) cans tomato sauce
- 2 tablespoons tamari or soy sauce
- 1/2 teaspoon liquid smoke
- 1 teaspoon ground cumin
- 1 teaspoon granulated garlic or garlic powder
- 1 teaspoon granulated onion
- 1/2 teaspoon salt
- Fine sea salt and freshly ground black pepper to taste
- Dash of cayenne pepper
- 3/4 cup fine or medium-grind yellow cornmeal
- 3/4 cup unbleached all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon fine sea salt
- 1 cup plain soymilk or other nondairy milk
- 3 tablespoons canola oil
- Your favorite bottled hot sauce
