  • 2 cups textured vegetable protein granules, preferably organic
  • About 1-1/2 cups boiling water
  • 1 tablespoon olive oil, plus more as needed
  • 1 large yellow onion, chopped
  • 6 cloves garlic, minced or pressed
  • 10 ounces cremini or brown button mushrooms, sliced
  • 2 (15-ounce) cans tomato sauce
  • 2 tablespoons tamari or soy sauce
  • 1/2 teaspoon liquid smoke
  • 1 teaspoon ground cumin
  • 1 teaspoon granulated garlic or garlic powder
  • 1 teaspoon granulated onion
  • 1/2 teaspoon salt
  • Fine sea salt and freshly ground black pepper to taste
  • Dash of cayenne pepper
  • 3/4 cup fine or medium-grind yellow cornmeal
  • 3/4 cup unbleached all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 1 cup plain soymilk or other nondairy milk
  • 3 tablespoons canola oil
  • Your favorite bottled hot sauce
