Spicy Rocoto Queso Dip – Fresh Pepper

Ingredients

• 1 tablespoon minced garlic
• 1 tablespoon chopped scallion whites or white onion
• 4 oz of shredded pepper jack cheese
• 4 oz shredded white cheddar or other sharp cheese
• 8 oz softened cream cheese
• 14 oz of evaporated milk
• 1 teaspoon cumin
• 1 teaspoon paprika
• 1 teaspoon salt
• 1/2 cup of chopped roasted rocoto peppers
• 8 oz chopped tomatoes, fresh or in a can (if fresh, saute them with the aromatics)
• 1/4 cup of chopped cilantro
• Optional: 1/2 cup of shredded cooked chicken or sausage
• 1 tablespoon chopped green onion greens
• 1 tablespoon chopped cilantro
• Chips to serve
