- 1 large broccoli, about 450 g (6 cups)
- 30 g (2 tbsp) butter
- 1 onion, quartered
- 1 potato, peeled and cubed
- 15 ml (1 tbsp) maple syrup (preferably golden syrup for its delicate flavour)
- 750 ml (3 cups) chicken or vegetable broth
- 45 g (3 tbsp) pesto (home-made or store-bought)
- Salt and pepper, to taste
