Ingredients

• 7 1/2 cups water
• 2 cups whole milk
• Salt
• 1 1/2 cups polenta (9 ounces)
• 4 tablespoons (1/2 stick) unsalted butter
• 1 medium garlic clove, minced or pressed through a garlic press (about 1 teaspoon)
• Ground black pepper
• 2 ounces Parmesan cheese, finely grated (about 1 cup, see note)
