- 200g of caster sugar

- 120g of ube halaya
- 230g of unsalted butter, softened
- 100g of soft light brown sugar
- 2 Freshlay Farms Golden Yolker® eggs
- 2 tsp vanilla bean paste
- 160g of desiccated coconut
- 300g of plain flour
- 1/2 tsp sodium bicarbonate
- 250g of white chocolate chips, plus a handful extra for adding to the tops
