• 1 onion, chopped
• 4 cloves
• 1 bay leaf, preferably fresh
• 1 tsp white peppercorns
• 1 blade mace, or ¼ tsp ground mace
• 100g white breadcrumbs
• 1 tbsp double cream
• pinch freshly grated nutmeg
• knob of butter
