Caramel Apple Cookies - Chew Nibble Nosh

Ingredients

• 1/2 cup butter, softened
• 1 1/4 cups packed brown sugar
• 1 teaspoon baking soda
• 1 teaspoon apple pie spice
• 1/4 teaspoon salt
• 1 egg
• 1/2 cup apple juice or milk
• 2 1/4 cups all-purpose flour
• 1/4 cup whole wheat flour or all-purpose flour
• 1 large Granny Smith apple, peeled, cored, and coarsely shredded (about 1 cup)
• For the icing:
• 1/2 cup packed brown sugar
• 3 tablespoons butter
• 3 tablespoons apple juice
• 2 2/3 cups powdered sugar
• 1/2 cup finely chopped pecans, toasted
