Spiced Lentil Taco Salad

Ingredients

• LENTILS:
• 1 Tbsp (15 mL) canola oil
• 3/4 cup (175 mL) diced onion
• 1 Tbsp (15 mL) minced garlic
• 1/4 cup (60 mL) salsa
• 1 tsp (5 mL) chili powder
• 1 tsp (5 mL) cumin
• 1 tsp (5 mL) coriander
• 1/2 tsp (2 mL) oregano
• 1/2 tsp (2 mL) salt
• 1/4 tsp (1 mL) pepper
• 2 canned chipotle peppers in adobo sauce, minced
• 2 cups (500 mL) cooked green lentils
• 1 lime, juiced
• to taste, salt and pepper
• SALAD:
• 1 head romaine lettuce, chopped
• 2 avocados, seed removed and chopped
• 1 cup (250 mL) shredded cheese
• 1 cup (250 mL) diced cucumber
• 8 radishes, thinly sliced
• DRESSING:
• 1/2 cup (125 mL) sour cream
• 2 Tbsp (30 mL) chopped cilantro
• pinch, salt
• 1 cup (250 mL) salsa
• 1 cup (250 mL) tortilla chips
