Creamy Pasta Salad recipe by Ruhana Ebrahim

Ingredients

• 250g penne pasta (or pasta of choice)
• 1 red pepper (diced)
• 1 green pepper (diced)
• 1 cup frozen sweetcorn
• Salt (to taste)
• Freshly crushed black pepper
• ¼ teaspoon coriander powder
• ¼ teaspoon cumin powder
• 1 teaspoon chilli flakes
• ½ teaspoon dried mixed herbs
• 2 carrots (thinly julienned)
• 2 tomatoes (diced)
• 1 teaspoon sugar
• 1 tablespoon lemon juice
• 1 tablespoon white vinegar
• 4 tablespoon 1000 Island salad dressing
• 4 tablespoon Sweet Chilli salad dressing
• Mayonnaise/ or Cross & Blackwell Trim (as needed)
