Cabbage Soup W/ Turkey Meatballs

Ingredients

• 3 tablespoons Olive oil
• 1 medium Onion - diced
• 2 medium Scallions - chopped
• 32 ounces Beef stock - low sodium preferred
• 2 cups Tomato Juice - or mixed vegetable juice (V8)
• 1 teaspoon Cajun Spice mix
• 1/2 teaspoon Salt
• 1/2 teaspoon Black pepper
• 1/2 cup Brown Rice
• 24 ounces green cabbage - finely shredded or chopped
• 1 pound Ground turkey
• 12 ounces Spinach - chopped (frozen is fine)
• 3/4 cup Bread crumbs - as needed
• 1 teaspoon Worcestershire sauce - to taste
