• 2 Ripe avocados
• 1/2 Green sweet/bell pepper chopped
• 1 Banana shallot chopped
• 1 Green chilli large chopped
• 2 Garlic clove chopped
• 2 tbsp Extra virgin olive oil
• 2 tbsp Cider vinegar
• 15 g Fresh coriander
• 10 g Fresh parsley
• 1 tsp Lime juice
• 1/2 tsp Caster sugar
• 1/4 tsp Salt
