Ingredients

  • juice of 2 lemons
  • 4 medium onions, sliced
  • 2 large onions, sliced
  • 450 g (1 lb) tahini
  • 110 ml (4 fl oz) olive oil
  • 1¼ tsp salt
  • ½ tsp saffron (optional)
  • 1½ kg (3 ¼ lb) (cleaned weight) good quality bream or mérou or other white fish yielding bone-free fillets
  • 1¾ cups uncooked rice
  • 2 ½ tsp salt
  • 4 tbs pine-nut kernels
  • 150 ml (5 fl oz) olive oil
