My Pimiento Cheese #3 is new version of my #2 made with sharp + extra sharp white cheddar cheese. Honey mustard + diced jalapeño add a sweet + zesty kick!

Ingredients
- 8 oz sharp white cheddar, finely grated (I used Tillamook)
- 4 oz extra sharp white cheddar, grated (I used Tillamook)
- 1 C Duke’s mayonnaise
- 4 oz roasted red peppers, diced
- 1 t honey mustard
- 1 t Worcestershire sauce
- 1/2 jalapeño, seeded + diced
- 1 bunch fresh chives, diced (2 T reserved for sprinkling)
- freshly ground pepper, to taste
