- 1 gherkin, finely chopped
- 25g capers, drained, rinsed and chopped
- 1 tsp. gin
- 1 tsp. tonic water
- 1½ tbsp. good quality thick mayonnaise
- 1 tsp. freshly chopped dill
- Salt and black pepper
- 1 slice of lemon
- 2 slices soda bread, lightly toasted or warmed on a griddle pan
- Butter to serve
