Ingredients

• 2 slices white sandwich bread, crusts removed, cut into 1/4-inch pieces
• 1/3 cup milk
• 2 1/2 teaspoons kosher salt
• 1 teaspoon ground black pepper
• 3 cloves garlic, minced
• 1 1/2 tablespoons Worcestershire sauce
• 2 tablespoons ketchup
• 3 pounds ground beef, 80-85% lean
• 3 scallions, optional, finely sliced
• olive oil, to taste, for oiling the grill grates
• 8 slices cheese, optional, of your choice
• 8 hamburger buns, for serving
• condiments, optional, of your choice, to taste
