Golden Mushroom Gravy

Ingredients

• 2 teaspoons vegetable shortening (like Earth Balance) you can use butter for a non-vegan gravy
• 1 Yellow onion chopped
• 1 pound mushrooms thinly sliced
• 3 tablespoons flour/thickener
• 2 cups vegetable stock
• 2-3 tablespoons tamari soy sauce
• 1/2 teaspoon thyme
• Freshly ground pepper
