• 5 hard boiled eggs, peeled then roughly chopped
• 3 tablespoons of mayonnaise
• 1/4 cup of finely chopped cornichon pickles
• 2 teaspoons of pickle brine (from the cornichons)
• 1 celery stalk, finely chopped
• 2 green onions, finely chopped
• 1 tablespoon of finely chopped flat leaf parsley
• 1/2 teaspoon of Dijon mustard
• 1/2 teaspoon of kosher salt
• 1/2 teaspoon of freshly ground black pepper
• whole grain bread (toasted)

• arugula
• finely chopped chives
