Dan’s Texas-style Beef Chili

Ingredients

• 4 Tbsp olive oil
• 2 lbs bottom round beef cut into 1/2" cubes
• salt to taste
• pepper to taste
• 1 Tbsp ground cumin
• 12 oz beer we prefer dark
• 2 Tbsp semi-sweet chocolate finely chopped
• 1 large red onion finely diced
• 6 cloves garlic finely chopped
• 1/2 poblano chili seeded and finely chopped
• 1 tsp habanero chili seeded and chopped, this makes it quite HOT
• 1 Thai chili seeded and chopped
• 1/2 jalapeno seeded and chopped
• 1 Tbsp Chipotles, canned in adobo sauce pureed
• 1 Tbsp ancho chili powder
• 1 Tbsp pasilla chile powder
• 1 Tbsp cascabel chili powder
• 1 tsp New Mexican chili powder
• 5 cups Chicken Stock low-sodium
• 16 oz whole tomatoes canned, drained and pureed
• 2 Tbsp maple syrup or more, to taste
• 1 Tbsp cumin seed
• 1 cup Mexican Crema or creme fraiche
