- 1 1/2 kgs chicken wings (wing tips removed and wings cut into 2 pieces)
- 2 tablespoons fresh ginger grated
- 5 small dried red chillies
- 2 whole star anise
- 1 stick cinnamon
- 1/3 cup Kikkoman soy sauce
- 1/3 cup sake
- 3 tablespoons oyster sauce
- 3 tablespoons mirin
- 3 tablespoons palm sugar ( preferably, but white sugar is fine too)
- 3-4 spring onions (green parts thinly sliced)
