eggplant sandwich Archives - Delights Of Culinaria

Ingredients

• 4-6 Sandwiches
• Bread of choice ( I used torta bread from Costco this time)
• 1 Eggplant sliced 1/2 inch thick.( peel or no peel)
• 1 red bell pepper
• 1 green bell pepper
• 4-6 slices of cheese Havarti,fresh mozzarella,provolone,monterey jack.
• 1-2 avocados sliced
• pesto sauce
• sundried tomatoes or fresh tomato sliced
• 2 eggs
• 1/2 cup panko crumbs
• salt
• oil for frying
