Tasty turkey sausage rolls

Ingredients

• 1 tablespoon butter
• 1 celery stalk, finely chopped
• 1 red onion, finely chopped
• 1/2 red capsicum, finely chopped
• 1 clove garlic, grated
• 500 gram turkey mince (or use chicken mince)
• 1 apple, grated
• 1 cup fresh breadcrumbs
• 100 gram walnuts, chopped
• 1/2 cup dried cranberries
• zest of 1 orange
• 1/2 teaspoon each ground ginger and thyme
• 1/2 teaspoon salt
• splash of olive oil
• 1 egg, lightly beaten
• 2 sheets flaky pastry, halved
• sesame or fennel seeds, to top
