Ingredients
- 1 whole gammon ham about 5kg (rolled but with the knuckle bone intact)
- 6 allspice berries
- 3 star anise
- 2 sticks cinnamon
- 8 coriander seeds
- 8 black peppercorns
- 1 onion quartered
- 2 small carrots peeled
- 100ml maple syrup
- 100g brown sugar
- a pinch chilli flakes
- 2 tsp Dijon mustard
- 1/2 tsp ground allspice
- 20-30 cloves
