A heavenly mix of sweet strawberry and thyme syrup, fruity gin and bubbles – this really is summer in a glass!
Ingredients
- 120ml strawberry gin (such as Beefeater)
- 2 tbsp strawberry and thyme syrup (see below)
- 400ml Champagne or crémant, well chilled
- 4 strawberries, quartered
- a few thyme sprigs
- 250g strawberries, halved
- 150g caster sugar
- 5 sprigs of fresh thyme
