- Pineapple and rum syrup
- 1/2 cup water
- 1/3 cup brown sugar
- 1 vanilla bean
- 1/2 a pineapple, peeled, cored, cut into chunks
- 1/4 cup dark rum
- 50 grams white chocolate, for decorating (optional)
- White chocolate mousse
- 100 grams white chocolate, in pieces
- 2 egg whites, whipped to stiff peaks
- 1 cup cream, whipped to soft peaks
